MEXICAN RICE



INTRODUCTION:-

Spicy and Hot Rice with Tangy and Cheesy Gravy

A Different Dish which is Simple and Easy


INGREDIENTS :-

For the Rice :

- Boiled Basmati Rice
- Finely Chopped Vegetables : Onion , Carrot , French Beans and Bell Peppers
- Red Chilly Sauce
- Tabasco Sauce
- Garlic Powder
- Red Chilly Powder
- Salt
- Oil

For The Gravy :

- White Sauce ( Milk- 2 Cups , Butter - 1 Spoon , Maida - 2 Spoon. Mix all and Cook it tills it gets Thick )
- Chopped Vegetables - Onion and Bell Peppers
- Olives and JalapeƱos for Topping
- Finely Chopped Garlic
- Red Chilly Sauce
- Tabasco Sauce
- Mozzarella Cheese
- Oregano and Chilly Flakes
- Red Chilly Powder
- Salt
- Butter

PROCEDURE :-

RICE :

Step 1:- In a Pan , Take Some Oil , Add the Onions in hot oil , After 2 Mins add Carrot and French Beans , After 1 Min add Bell Peppers

Step 2:- Add Salt and Stir fry for Some time. Red Chilly Sauce, Tabasco Sauce, Red Chilly Powder and Garlic Powder.

Step 3:- Stir Fry for 1 Minute. Add Rice and Mix it well

The Rice Is Ready !!




GRAVY :

Step 1:- In a Pan , take some Butter add Garlic and Onion. After 2 Minutes Add Bell Peppers.

Step 2:- Stir Fry for 2 Minutes, then Add Red Chilly Sauce, Tabasco Sauce, Oregano, Chilly Flakes, Red Chilly Powder and Salt (as per taste).

Step 3:- Stir Fry Properly then add White Sauce. Then Grate some Mozzarella Cheese.

Step 4:- Mix it Well and Add Some water if needed. Let it simmer till the gravy is Nice and thick

Your Gravy is Ready Too

SERVE THE RICE WITH GRAVY AND ENJOY !!


MIX VEGETABLE FRIED RICE



INTRODUCTION :-

MIX VEGETABLE FRIED RICE

INGREDIENTS :-

- Boiled Basmati Rice

- Paneer, Onions , Bell Peppers , Sweet Corn , Carrot , French Beans and Spring Onion ( Vegetable of your choice)

- Red Chilly Sauce

- Tabasco Sauce - if Avaialble

- Schezwan Sauce - If Available

- Ginger Garlic Paste - Optional

- Soya Sauce & Vinegar - Optional

- Red Chilly Powder

- Salt

PROCEDURE :-

Step 1- In a Pan , Take Some Oil , add Ginger Garlic Paste , then Onions , Carrot and French Beans

Step 2- Stir Fry for some time , then add Bell Peppers , Sweet Corn and Spring Onions

Step 3- Add All the Sauces Available and the ones you Like

Step 4- Mix it and then add Red Chilly Powder and Salt

Step 5- Stir Fry for 3-4 Minutes and then add Paneer

Step 6- After 2 minutes add Boiled rice and Mix it well

Your Mix Vegetable Fried Rice is Ready !!



CHEESY RICE BALLS



INTRODUCTION :-
Out of the box Use of "Left Over Rice", Delicious Starter and Healthy Snack

INGREDIENTS :-
- Boiled Rice - 1 Cup
- Paneer - 1 Cup ( Grated )
- Carrot - 2 Spoon ( Grated )
- Sweet Corn - 2 Spoon
- Mozzarella Cheese Cubes ( Small )
- Green Chilly - 1 ( Finely Chopped )
- Corn Flour - 1 Spoon
- Corn Flour Slurry ( 1 Spoon Corn Flour in 4 Spoon Water )
- Bread Crumbs
- Sesame Seeds
- Garlic Powder ( Optional )
- Oregano or Italian Seasoning
- Salt To Taste

PROCEDURE :-
1. For Outer Layer
- In A Bowl , Take Rice add Paneer , Seasoning , Salt and Corn Flour, Mash It and Prepare a Dough

2. For Stuffing
- Take Carrot , add Cheese Cubes , Sweet Corn and Chilly and Mix It

3. For Preparing Balls
- Stuff the Stuffing in the Dough and Make Balls of it
- Dip the balls in the Corn Slurry and Roll it over Bread Crumbs and Sesame Seeds

4. For Frying
- Fry them at High Flame , till they turn Golden Brown

Your Cheesy Rice Balls are Ready !!

Serve them with Mint Chutney and Tomato Sauce
Enjoy !!


MANCHURIAN RICE



INTRODUCTION :-

Good time dinner with delicious combination of Manchurian and Rice.


INGREDIENTS :-

- Basmati Rice
- Manchurian Ball (Follow recipe Delicious Manchurian)
- Chopped: Cabbage, Carrot, Beans, Onion, Capsicum, Ginger, Garlic, Spring Onion and Chilly.
- Soya Sauce, Green Chilly Sauce and Vinegar.
- Chutney and Noodle Masala (If required).


PROCEDURE :-

Step 1. In a container (Kadai) add 2 tbsp oil. Add all chopped materials.

Step 2. After 2-3 minutes, add Soya Sauce, Green Chilly Sauce, Vinegar, Chutney, Noodle Masala and Salt.

Step 3. Then add boiled rice and mix it gently.Add Manchurian Balls. Make sure the rice does not break.

Your Manchurian Rice is ready to serve.


RICE SEVAI UPMA



INGREDIENTS :-
(measuring cup used, 1 cup = 250 ml)

For cooking rice vermicelli:
- 180 grams rice sevai(rice vermicelli) about 1.75 cups
- 4.5 to 5 cups water for cooking rice vermicelli

For tempering:
- 1 tsp mustard seeds
- 2 green chilies (chopped)
- 1/2 inch ginger (finely chopped)
- 1 medium onion (finely chopped)
- 8 to 10 curry leaves
- 12 to 15 cashews (halved or whole)
- 4 to 5 tbsp grated coconut
- 2 tbsp coconut oil (you can also use ghee)
- 2 to 3 tbsp chopped coriander leaves
- 1 small to medium lime or lemon, sliced or diced for Garnish.
- salt as required


PROCEDURE :-

Step 1. Take a pan and boil 5 cup of water. Add 1.75 cups rice sevai to the boiling water

Step 2. Stir gently and cook the sevai on a medium to high flame.

Step 3. Drain the sevai in a strainer. Keep the cooked sevai aside.

Tempering & Preparing the upma:
Step 1. In another pan, heat 2 tbsp coconut oil and add mustard seeds and let them crackle. 

Step 2. Add 12 to 15 cashews, saute till the cashew get a bit golden.

Step 3. Add 1 tsp finely chopped ginger, ½ tsp green chilies. stir and saute for 5 to 10 seconds.

Step 4. Add finely chopped onion and 10 curry leaves. Saute till the onions become translucent. Don't brown them. 

Step 5. Add the cooked rice sevai and stir very well.

Step 6. Season with salt. stir and add 4 to 5 tbsp fresh grated coconut. 

Drizzle some lemon juice while serving.
Serve rice sevai hot plain or with coconut chutney.  Garnish with chopped coriander leaves.


LEMON RICE


INTRODUCTION :-

Lemon Rice is one of the popular South Indian Dish. It is also liked by people around the globe. The process of making lemon rice is simple and easy. It can be one of the kids tiffin dish too.

INGREDIENTS :-

- 3 Cup Rice
- 2 tbsp lemon juice
- 1 pc Green Chili & 2 pc dry Red Chili (Depending on Taste)
- 1 tbsp Rai (Mustard Seed)
- 1 tbsp Urad Dal (skinned black gram)
- 1/2 tbsp Haldi (Turmeric Powder)
- 3 tbsp Moongfali (Peanut)
- 3 tbsp Sessame Oil
- Sendha Namak (Rock Salt) as per Taste
- A pinch Heeng (Asafoetida)
- 1 tbsp Kaju (Cashew- Chopped)

PROCEDURE :-

Step 1. Cook rice in normal procedure (You can use Basmati Rice also for the same recipe)

Step 2. Take a frying Pan and roast peanut & cashew seperately.

Step 3. Heat the Sesame Oil in Fryng Pan, add mustard seed & urad dal. Stir it until colour is brown.

Step 4. Fry in low flame: Add Red Chilly & Green Chilly and fry for 15 seconds. Then add heeng and haldi - fry for 3 sec. 

Step 5. Switch off the fire. Add the lemon juice, salt & rice and mix very well. 

Keep lemon Rice covered in the pan for the flavour to blend.

Serve the lemon rice with papad or coconut chutney.



DUM HANDI BIRYANI


Introduction :-

Try this Biryani at Home and you'll Forget all the Restaurants.
Healthy , Tasty and Easy to Make
DUM HANDI BIRYANI

Ingredients :-

Vegetables - French Beans, Potato, Carrot, Onion, Sweet Corn, Peas, Bell Peppers. (You can add Any Vegetables of your Choice)
Kaju (You can also Add Paneer)
Basmati Rice
Chilly Ginger Garlic Paste
For Biryani Masala Paste :-
Curd - 2 Spoon
Biryani Masala - 1 Spoon
Garam Masala - 1 Spoon
Any Ready Made Curry Mix - 1 Spoon
Chilly Powder - 1 Spoon
Turmeric Powder - 1/2 Spoon
Salt to taste

Procedure :-

Step 1 - Cut all the Vegetables and Make the Biryani Masala Paste by Adding all it's Ingredients and Mix Well
Step 2 - Half Boil all Vegetables except Onions and Bell Pepper and Boil Rice up to 90% and add Salt Simultaneously.
Step 3 - In a Kadai Pour some Oil, Add Chilly Ginger Garlic paste then Onion, Bell Pepper and Kaju and cook for 1 minute
Step 4 - Add rest of the Vegetables,cook for sometime and add the Biryani Masala Paste and cook for 3-4 minutes on Low Flame.
Step 5 - Add the Strained Rice on top of the Vegetables and Add 2-3 Spoon of Water.
Step 6 - Cover the Kadai and Let it "Dum" for 2-3 minutes on Low Flame till the water gets absorbed.
Your Dum Handi Biryani is Ready
Mix it a Little and Serve it with Raita.


TAVA RICE TAKA-TAK


INTRODUCTION :-
Healthier and Tastier twist to your Normal Rice. If your Kids Hate Vegetables this is a Good Way to make them Eat Vegetables !!


INGREDIENTS :-
-Vegetables of your choice , we have used - Carrot , Potato, French Beans , Bell Peppers , Sweet Corn, Onion and Peas
-Basmati Rice
- Oil 4-5 Spoons

As per Taste :-
-Ginger Garlic Paste
-Paneer
-Kaju
-PAV Bhaaji Masala
-Garam Masala
-Biryani Masala
-Turmeric Powder
-Red Chilly Powder
-Jeera
-Salt
Procedure :-
Step 1 - Boil all Vegetables except Onion and Bell Peppers for 3-4 mins and Strain it. Then in the Same Stock( The water in Which you boiled the Vegetables ) Boil Rice so the rice will cook with the Flavors of the Vegetables.
Step 2 - In a big Non Stick Tava , Take some oil, jeera and Ginger garlic paste then add Onions and Bell Peppers.
Step 3 - After 1 min Add Paneer and Kaju. Stir Fry it for 2 mins then add the Boiled Vegetables and Stir Fry for 3 mins.
Step 4 - Add all the Masala and Stir fry for 3-4 mins.
Step 5 - Add Rice , mix it Gently with 2 Spoons. Stir fry the Rice for another 2 mins
YOUR TAVA RICE TAKA-TAK are Ready !!
Serve it with Raita and Papad !!


VEGETABLE FRIED RICE WITH DAL FRY


INTRODUCTION:-

RICE :-
INGREDIENTS For Rice

- Basmati Rice (Soaked for 30 mins)
- Vegetables :- Carrot, French Beans, Peas, Sweet Corn, Onion, Green Chilly and Bell Peppers (Chop as shown in the Pic)
- Ginger Garlic Paste
- Cumin Seeds ( Jeera )
- Oil
- Salt
- Water ( 2 cups for 1 cup rice )


PROCEDURE For Rice :-

Step 1 - In a Kadai, take some oil add cumin seeds , Add Ginger Garlic Paste and Onion. After 2 mins add All the Vegetables. Stir it for 3-4 mins
Step 2 - Add Soaked Rice,Water and Salt ( Start Stirring After adding water otherwise the Rice may Break )
Step 3 - Cook it till the Rice Is Fully Cooked.
Your Vegetables Fried Rice Is Ready !!

DAL FRY :-
INGREDIENTS For DAL FRY

- Tuver Dal - 1 Cup ( Soaked for 30 mins )
- Channa Dal - 2 Spoon ( Soaked for 30 mins )
- Onion - 1
- Tomato - 3 to 4
- Green Chillies
- Tamarind Pieces - 4 to 5
- Ginger Garlic Paste
- Water ( 2 cups for 1 cup dal )
- Cumin Seeds ( Jeera )
- Turmeric Powder
- Salt

PROCEDURE For DAL FRY

Step 1 - In a Cooker take some oil, Add Cumin Seed, Ginger Garlic Paste and Onion, after 2 mins add Tomato, After 3-4 mins add Dal , Tamarind , Turmeric Powder and Salt. Stir it for 2 mins.
Step 2 - Add Water and Cook it at Low Flame till "1 Whistle Blows"
Your Dal Fry is Ready !!
SERVE IT WITH PAPAD AND RAITA
